Description

PURPOSE:This position contributes to the success of EatZi’s by partnering with General Managers and operations teams to develop a compelling market for “Meals for the Taking,” all with the goal of developing an Industry Leader in quality employment, quality food, business growth, value perception and profitability.   

 

RESPONSIBILITIES

ESSENTIAL FUNCTIONS:

1.        Train and manage kitchen personnel.

2.       Supervise/coordinate all related culinary activities.

3.       Estimate food consumption and requisition or purchase food.

4.       Select and develop recipes.

5.       Standardize production recipes to ensure consistent quality.

6.        Establish presentation technique and quality standards.

7.       Plan and price menus.

8.       Ensure proper equipment operation/maintenance.

9.       Ensure proper safety and sanitation in kitchen.

10.   The executive chef may oversee special catering events and may also offer culinary instruction and/or demonstrate culinary techniques.

11.   The executive chef directly supervises kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases.

12.   Maintaining impeccable personal hygiene as well as high work and safety standards in the workplace is incredibly important for all chefs, and the executive chef is expected to set an example for the chefs below him or her.

13.   Implement strategies and programs to promote EatZi’s as reputable source for highest quality foods, wine & beverages.

14.   Partner and inspire the market level staff to establish and maintain a sense of self pride and passion of food, service and high standards.

15.   Give “HONEST” direct unfiltered information regarding Back of House and Front of House team performance to General Manager on a regular basis.

16.   Work closely with General Manager to build a BRAND that is unique, upscale, profitable and a compelling place to work and shop.

17.   Provide training tools for players so they may effectively perform their necessary job duties.

18.   Must be able to meet the attendance guidelines of the job and adhere to departmental and company policies.

19.   Support and emulate the work culture, policies, procedures, and standardization set for by EatZi’s.

20.   Maintain a positive work environment within the kitchen and market.

Qualifications

1.       The ideal candidates will possess a bachelor's degree or related culinary degree with 10 or more years of industry and culinary management experience.

2.       A minimum of 3+ years knowledge and experience of high volume “meal-market” food production and merchandising.

3.       Proven experience in managing and maintaining food and labor aspects of P&L and budgeting functions.

4.       Strong strategic planning and organizational development skills – both short and long-term.

5.       Well-organized, with proven ability to meet timelines and show results through initiatives. 

6.       Is results-oriented and able to set the vision and see the “big picture.”

7.       Excellent interpersonal, communication and listening skills – both with internal and external constituencies.

8.       Excellent and ethical vendor-partnership skills with knowledge and experience of sourcing unique and new products.

9.       Possess strong leadership skills with an ability to build a team to reach desired goals.

10.   Provides an “out of the box” approach to business.  Able to infuse new ideas, systems and programs to achieve objectives.

11.   Good analytical and problem-solving skills.

12.   Positive, optimistic, enthusiastic and self-confident attitude.  Operates calmly and proactively in stressful and difficult situations.

13.   Communicates and interacts professionally and respectfully with all levels of individual in the organization.

14.   Background in High-Profile restaurants, hotels, and/or resorts.
