Responsibilities:
Essential Functions:
- Coach, manage, and evaluate the performance of back of house hourly team members
- Actively manage and participate in large volume food production in a fast-paced environment, and when necessary, operate in any food preparation station in the kitchen
- Maintain safety and sanitation procedures in compliance with local health department requirements, frequently inspecting kitchen to ensure staff compliance
- Establish quality and food production controls to minimize food and supply waste
- Adhere to company recipes to ensure quality of foods produced
- Regularly check and coordinate maintenance on equipment
- Communicate professionally and respectfully with all levels of individuals in the organization
- Develop new recipes and/or refine existing recipes
Marginal /Other Functions:
- Fill in for Executive Chef and Executive Sous Chef, as needed
- Participate in creating schedules for back of house staff
- Proactively recognize and address safety concerns in the kitchen and dishwashing area
- Assist in coordinating and participating in the market’s periodic inventory process
- All other duties as assigned by senior leadership
- Occasional local travel to pick up/deliver goods
Minimum Knowledge, Skills, Qualification, and Abilities:
- A minimum of 3+ years of high-volume food production and culinary management experience
- Culinary degree preferred
- Positive, optimistic, enthusiastic, and self-confident attitude
- Operates calmly and proactively in stressful and difficult situations
- Ability to obtain Food Handler’s certification and TABC certification.
- Strong analytical problem-solving skills and is resourceful
- Ability to exercise good independent judgement
- Ability to respond calmly and make rational decisions to handle employee conflicts
- Well-organized, with proven ability to meet timelines and show results through initiatives
- Support and emulate the work culture, policies, procedures, and standards set by Eatzi’s
- Ability to work quickly and efficiently
OTHER:
Work Environment/ADA Statement:
- Requires use of hot stoves, ovens, and kettles
- Must retrieve goods from commercial coolers and freezers
- Must use knives and meat slicers with skill and care Must prepare hot and cold foods
- Must be able to retrieve and move products stored on both high and low shelves
- Requires food preparation and oversight at standing level prep and retail stations
- Non-slip shoes are required
- Must navigate narrow walkways and confined work areas with care
Physical Requirements:
- Must be able to push or pull food carts up to 250 lbs
- Must be able to lift large containers of food as much as 50 lbs
- Must be able to walk/stand up to 10 hours per day
- Must be able to lift pans, bowls and trays of hot and cold food
- Must be able to reach, crouch, bend, stoop, twist, kneel, climb ladders, grasp and squeeze
- Must be able to tolerate hot and cold temperatures
